What is Lauki (Bottle gourd, Doodhi)?

Lauki also knows as doodhi, bottle gourd, white flowered gourd and long melon. There are two types of lauki one is rounded which is called as calabash and other is long as bottle shaped called as bottle gourd. Here in this recipe I used bottle gourd. This have the smooth skin and light green in color. the inner side is whitish in color, soft and spongy flesh with tiny seeds. As the vegetable begins to mature, the seeds become harder. So, While you make curry of bottle gourd you have keep some tips in mind which is choosing of right bottle gourd.

How to choose perfect bottle gourd or lauki for cooking?

When you choosing bottle gourd for cooking always remember one thing avoid the oversize, mature and dis-coloration. Actually the stem also tells about the bottle gourd which is fresh or aged. It can be available around the whole season, whenever you buy it from market then look for fresh, medium size, uniform in structure and light green in color. This is the main step for the delicious recipe.

Now come to the main part the recipe.

Preparation of lauki chana dal curry recipe:

Ingredients: 

  • 1/4 cup chana dal (split chickpea)
  • 2 cups chopped lauki (bottle gourd)
  • 2 tbsp cooking oil
  • 1 medium size chopped onion
  • 2 medium size chopped tomato
  • 2 tbsp ginger garlic paste
  • 1/2 tsp cumin seed
  • 2 bay leaf
  • 1/2 inch cinnamon stick
  • 1 pinch asafoetida (hing)
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1/2 tsp coriander powder
  • 1/2 tsp garam masala
  • salt to taste
  • 1 cup water
  • chopped coriander leaf for garnish

Preparation: 

Step 1: Soak the chana dal for 2 hours, then wash it properly till the whitish water is completely gone.

Step 2: Peel the bottle gourd and cut it in cube size. If you want to add potato then cut as like lauki otherwise skip it. Then wash them properly.

Step 3: Take a pressure cooker, put soaked chana dal, lauki 1/4 tsp turmeric powder, salt to taste and 1/2 cup water. Then put the pressure cooker in medium flame and cook it for 1 whistle.

Step 3: After 1 whistle switch off the flame and allow to escape all the steam from cooker and keep aside.

Step 4: Heat a kadhai add 2 tbsp of cooking oil. After heating the oil in low medium flame then add cumin seed, cinnamon stick, bay leaf.

Step 5: When cumin seed comes to crackle then add asafoetida (hing) and saute for few second in low flame. After that add chopped onion into the kadhai and saute in low medium flame till the color of onion turns to pink.

Step 6: When onion color is changes to pink then add ginger garlic paste and mix it in medium flame for few second. When the raw smell of ginger garlic is completely gone then add chopped tomato into it and mix it properly.

Step 7: After mixing the above masala then add turmeric powder, coriander powder, red chili powder, 1/4 garam masala powder and salt to taste. After adding all dry spices mix it properly in medium flame for few seconds.

Step 8: After few seconds add 2-3 tbsp of water into the masala, then mix it and cook it for 1 minute with lid in low medium flame. After a minute when oil comes out from masala and the masala begins to leave the kadhai then your masala is ready.

Step 9: Add boiled lauki and chana dal into the masala and mix this properly and cook it for few minutes in medium flame.

Step 10: Then add some water, quantity is depends upon you, Then boil it again for few minutes in medium flame. After one boil switch off the flame and add rest 1/4 tsp garam masala and chopped coriander leaf. 
                        Then serve hot with roti or boiled rice. You can garnish this with chopped coriander leaf or mint leaf.           

Tips for lauki chana dal curry recipe:

  • To make the curry delicious don't overcook the chana dal and lauki in pressure cooker, otherwise it becomes mushy which destroy the taste as well as looks.
  • Always try to soak the chana dal for 1 and 1/2 hour or 2 hour, don't exceed the time.
  • Always use youngest bottle gourd because mature one tastes slightly sour and it have harder seed which disturbed  while chewing.
